The zucchini is not my favorite vegetable. In restaurants, crafted by people who know what they're doing, it's often quite tasty. At home, with amateurs, it's often squishy and a bit gross. Give me a carrot or green bean any day!
The number of zucchini we've sold has shocked me. People, lots of people, get excited about this vegetable?! So I started asking people what they did with it and have been surprised with the variety and tasty ways people prepare it. Turns out, there are lots of ways to serve it without getting a squishy mess. Who knew! Here are a few ways to prepare zucchini and why it turns out yummy.
1. Rigatoni with Summer Squash - My sister made this one time we visited and I was in love. I barely cook the zucchini and squash so they don't mush at all and my kids even really like it. We call it Sausage Pasta so the kids don't think about all the other stuff in it.(This is also when I feel in love with goat cheese.)
2. Zucchini Cakes - Our wholesale CSA lady told me about this one today and I can't wait to try it. Grating zucchini totally takes the squishy out of it but gives you all the flavor and vitamins! It's a great idea for a side dish but Heather was making it to just pick up and eat like a sandwich. Brilliant!
3. Zucchini Boats - Multiple people told me about this at the store and I will admit, I was very skeptical. Why would you want to eat the entire zucchini and how much squishiness would there be?! But we made this one night and everyone liked it. What I also love about this concept, is that you can totally change up the ingredients. Use sausage, beef, or go meatless. More cheese, less cheese, different cheese. Love it! (My kid make the sail, so it was a real boat.)
